Everybody knows that General Tso's is the top-tier takeout choice. This Peng Teng Tso's is a slight variation on the usual, made with spicy chiles, so if you like it hot you'll be all about it.

ingredients

4 chicken legs
1/2 cup soy sauce
1/2 cup white vinegar
1/2 cup water
1 clove garlic, minced
1 teaspoon peeled and minced ginger root
1 large egg, beaten lightly
1 teaspoon cornstarch
1/3 cup corn oil
4 dried hot chiles, seeded

directions

Remove the skin and bones from the chicken legs, leaving the meat in bite-sized chunks.

In a bowl, combine the soy sauce, vinegar, water, garlic, and ginger and mix well. In another bowl combine the egg and cornstarch and stir until smooth.

Heat the oil in a wok or heavy skillet over medium-high heat. When hot, dip the chicken pieces into the egg mixture, letting any excess drip off. Add the chicken to the wok and cook, stirring frequently, until crisp. Remove the chicken from the wok with a slotted spoon and let drain on paper toweling.

Drain off all but one tablespoon of the oil from the wok. Add the soy sauce mixture to the wok along with the chiles and the drained chicken. Cook, stirring frequently, for 2 minutes or until heated through.

Serve immediately.
