2 boneless, skinless chicken breast halves
1/4 cup soy sauce
1/2 cup water
1 tablespoon apple juice concentrate or brown rice syrup
1/2 teaspoon rice vinegar
2 cups sliced mushrooms
garlic, to taste
1 cup cooked brown rice
directions
Grill the chicken breasts.
While grilling, simmer the soy sauce, water, apple juice concentrate, vinegar, mushrooms, and garlic in a saucepan for about 15 minutes. Pour this mixture over the chicken and brown rice.
