A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Wild Duck or Goose Casserole

ingredients
2 ducks, cooked and deboned
OR
1 goose, cooked and deboned
2 tablespoons butter or margarine
2 tablespoons flour
1 cup chicken broth
1/2 cup burgundy wine
3 tablespoons minced onion
1/2 teaspoon salt
1 bay leaf
1 can (4 ounce size) sliced mushrooms
directions
Place fowl in a greased 1-1/2 qt. baking dish.
Melt butter and add onion. Cook until onion is tender. Add flour and cook until bubbly. Add the broth stirring constantly to avoid lumps. Then add wine and bay leaf. Cook until thickened.
Remove bay leaf, add mushrooms, and bake for 1 hour at 350 degrees F.
