Cashew Chicken with Broccoli

ingredients
1/2 cup raw cashews
2 teaspoons vegetable oil
1 small onion, chopped
2 cloves garlic, finely chopped
4 boneless, skinned chicken breast halves, cubed
1 cup broccoli florets
1 cup reduced-sodium chicken broth
2 tablespoons soy sauce
2 teaspoons cornstarch
1/4 teaspoon salt
1/4 teaspoon black pepper
directions
Lightly brown nuts in oil in large nonstick skillet over medium heat, about 3 minutes. Remove with slotted spoon.
Saute onion and garlic in skillet 2 minutes. Add chicken; saute until golden brown, about 8 minutes. Add broccoli, 3/4 cup broth and soy sauce. Simmer, covered, 5 minutes.
Dissolve cornstarch in remaining 1/4 cup broth; stir into skillet. Simmer, stirring, over medium heat until thickened. Boil 1 minute. Return cashews to skillet with salt and pepper.

Taking into consideration the previous reviewers suggestion about the broccoli, we put about 2 cups of it into our recipe. It was a very tasty dish with a lot of very nice subtle flavors. The only weird thing is that when it's done cooking, the chicken has the same color/tone as the cashews, but that's only aesthetic. I'd highly recommend this to anyone who's on the wall about making a dish like this; you won't regret it!

Our only real complaint was that the amount of broccoli seemed a bit light. We'd double it next time and then the recipe should be just about right.
