Salt And Pepper Fish Fillet

ingredients
6 sole fillets, skinned and boned
3 eggs, beaten
1/4 cup milk
5 teaspoons turmeric powder
7 ounces semolina
2 teaspoons chili powder
2 teaspoons cracked black pepper
1 tablespoon fine salt
7 ounces polenta
extra virgin olive oil
3 limes
olive oil for pan frying
directions
Mix the beaten eggs with the milk. Set aside.
Combine turmeric, semolina, chili powder, pepper, salt and polenta in a bowl and set aside.
Place the fillets in the egg wash and then coat evenly in the spice and semolina mixture. Place coated fillets on a clean tray.
In a shallow pan, add some extra virgin olive oil and shallow fry on a medium heat until fish is cooked through; be careful not to give the fish too much color. Place cooked fish on paper towels to dry.
Serve with lime wedges
