Poached Fillet Of Sole

ingredients
1 1/2 cup water
1/2 medium onion
1 bay leaf
1 tablespoon lemon juice
1 tablespoon vinegar
3 peppercorns
1 teaspoon salt
1 pound sole fillet
chopped parsley
directions
Place water, onion, bay leaf, lemon juice, vinegar, peppercorns and salt in saucepan and heat for 5 minutes.
Cut fish into serving-sized pieces. Add to water mixture. Cook over low heat for 5 to 10 minutes or until fish flakes easily with a fork.
Sprinkle with chopped parsley before serving.
