It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Baked Fillets Thermidor

ingredients
2 pounds sole fillets
5 tablespoons butter or margarine
2 teaspoons salt
1/4 teaspoon black pepper
1/2 teaspoon seasoned salt
1 1/4 cup milk
3 tablespoons flour
1 cup grated sharp Cheddar cheese
3 tablespoons sherry

directions
Preheat oven to 350 degrees F. Wash fillets, and dry on paper towels.
Melt 2 tablespoons butter. Use to brush dark side of fillets. Sprinkle with salt, pepper, and seasoned salt.
Roll up fillets, seasonings inside. Arrange in a 9-by-9-by- 1 1/2-inch baking dish. Pour on 1/2 cup milk. Bake, uncovered, for 30 minutes.
Meanwhile, in medium saucepan, melt rest of butter. Remove from heat. Add flour, stirring until smooth.
Gradually stir in remaining milk and bring to boiling, stirring constantly. Reduce heat. Add cheese, stirring until it is melted. Then add sherry.
Carefully drain liquid from fish and stir into cheese sauce. Pour sauce over fish. Sprinkle with paprika.
Place under broiler, 4 inches from heat, until sauce is golden-brown.

I couldn't find sole so I used halibut. The liquid added to the cheese sauce was a little on the fishy side. Not sure if that was from using halibut instead of sole or not. I wouldn't do that again I would use broth or water or milk or melted butter or something other than the fishy liquid. Otherwise, I liked the dish because the fish was incredibly flaky and flavorful.
