Fish Stick Casserole

ingredients
1 package scalloped potatoes
3 cups water
1 cup milk
2 tablespoons margarine or butter
1 cup frozen peas
1 package (10-12 ounce size) frozen fish sticks
directions
Heat oven to 400 degrees F. Spray 12x8-inch (2-quart) glass baking dish with nonstick cooking spray. Prepare potatoes as directed on package for oven in sprayed baking dish, using water, milk and margarine. Sprinkle potatoes with peas.
Bake at 400 degrees F for 15 minutes. Arrange fish sticks over peas and potatoes. Bake an additional 20 to 25 minutes or until potatoes are tender.

It felt a little like cheating, what with the two main ingredients being store-bought fish sticks and store-bought au grain potatoes. But this recipe is quick and easy, filling and very satisfying! On the other hand, it nonetheless is fairly high in sodium, fat, and carbs. So enjoy in moderation, as an occasional busy mom's evening fall-back. At least your kids will eat this with gusto!

I'm not a big fish stick fan but I had purchased some to try. By themselves not so good but in this recipe they were really good. My husband and I were very surprised. Not fishy tasting at all. I would call this a warm, comfort food. I used mixed frozen veggies, instead of just peas. I also mixed the veggies in with the potatoes rather than layering. I used only 2 cups of water because that's what the box of scalloped potatoes I had required and I cut the butter down to one TBS and used 2/3 cup of skim milk. Because of the size of my casserole pan and the size of my fish stick I only used 6 sticks to cover the top and cooked it for a total of 45 minutes. I have to say again how surprised I was at this dish. My husband and I went back for seconds. :O)
