ingredients

1 jar (5 ounce size) dried chipped beef
2 tablespoons butter
1/2 onion, finely diced
2 tablespoons all-purpose flour
2 cups milk
salt and pepper, to taste
4 slices toasted bread

directions

Place the dried beef in a saucepan. Add enough cold water to cover the beef. Bring the water to a boil then immediately drain off the water and let the beef cool.

Add the butter to a large saucepan over medium heat. Add the onion and cook, stirring frequently, until the onions are translucent. Stir the flour into the butter, mixing constantly until smooth. Continue to stir until the flour mixture starts to bubble.

While continually stirring, very slowly add the milk, mixing well until smooth and thick.

Chop the cooled beef into small pieces and add to the sauce. Mix well and heat through. Season to taste with salt and pepper. Serve the creamed beef over toast.

recipe tips

For added flavor, saute the onions in the butter until they are caramelized for a deeper, sweeter taste. Lower the temp and increase the cooking time.

Adjust the seasoning with additional herbs or spices if desired.

If the sauce is too thick, simply add a little more milk until you reach your desired consistency.

To make a quicker version, use pre-cooked beef strips or shredded beef instead of chipped beef.

Try topping the dish with a fried or poached egg for a variation

This dish is also known as "SOS" (Sh** on a Shingle) as served in the American military. The "shingle" in the dish's name refers to the piece of toast on which the beef and gravy mixture is served.

common recipe questions

What is chipped beef?

Chipped beef is air-dried, salted beef that is sliced very thin. It is often used in dishes like this creamed chipped beef on toast.

Why do I need to boil the dried beef before using it?

Boiling the dried beef helps to remove excess saltiness and rehydrate the beef, making it more palatable in the final dish.

Can I use fresh beef instead of dried chipped beef?

While traditionally made with dried chipped beef, you can use cooked fresh beef or deli-style roast beef in this recipe, though the flavor and texture will be slightly different.

Is there a substitute for chipped beef?

If you can't find chipped beef, you can substitute cooked and crumbled bacon, ham, or even cooked chicken.

How do I know when the flour mixture is ready?

The flour mixture is ready when it begins to bubble and starts to lose its pure white color (you don't want it to actually start to brown, however). This indicates that the flour has cooked and will not taste raw in the final dish.

Can I use a different type of milk?

You can use any type of milk you prefer, such as whole milk, 2%, or even a dairy-free alternative like almond milk. Just be aware that the richness and flavor may vary slightly.

Can I reheat creamed chipped beef?

Creamed chipped beef can be reheated gently on the stovetop or microwave, adding a little extra milk to thin the sauce if needed. Avoid high heat to prevent the sauce from breaking.

How long can I store leftovers?

Leftover creamed chipped beef can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat thoroughly before serving.

Can I freeze creamed chipped beef?

While technically you can freeze creamed chipped beef, the texture of the sauce may change slightly upon thawing as cream-based sauces don't tend to freeze well. It's best enjoyed fresh.

tools needed

Large Saucepan: For boiling the dried beef and preparing the sauce.

Knife: To dice the onion and beef for the recipe.

Whisk or Spoon: For stirring the flour into the butter and incorporating the milk into the mixture.

Toaster or Oven: For toasting the bread to serve the creamed chipped beef on toast (if using).

what goes with it?

Mashed Potatoes: adding creamy mashed potatoes will bring a comforting, carb-loaded element to the dish, balancing out the salty richness of the chipped beef.

Hot Sauce: a drizzle of hot sauce on top of the creamed chipped beef will kick up the flavor and add a spicy punch to each bite.

Fried Eggs: plopping a fried egg on top of the creamed chipped beef will take this classic comfort food to the next level.

Biscuits: Buttered and fluffy biscuits are the perfect vehicle for sopping up all that delicious creamed chipped beef sauce. The flakiness of the biscuit will add a nice contrast to the soft beef. It's a heartier variation to the chipped beef on toast.

beverage pairings

Wine Pairings
Chardonnay: Chardonnay can provide a nice balance to the saltiness of the beef and the creaminess of the sauce. Look for a lightly oaked one to complement the dish without overpowering it.

Viognier: If you're looking for something a bit more unique, a Viognier with its aromatic floral notes and hints of stone fruit can bring a lovely, slightly exotic touch to this classic dish.

Cabernet Sauvignon: For those who prefer a red with everything, a Cabernet Sauvignon with its bold tannins and flavors of blackcurrant and bell pepper can stand up to the richness of the dish.

Other Alcohol Pairings
Whiskey: A smooth, slightly smoky whiskey can add a touch of sophistication to this comfort food. Look for a bourbon or rye that has some caramel or vanilla notes to complement the flavors.

IPA: If beer is more your style, an IPA with its hoppy bitterness and citrusy notes can provide a nice contrast to the rich sauce.

Gin and Tonic: For a refreshing option, a crisp gin and tonic with its herbal and citrus notes can cut through the salty, creamy sauce.

Non-Alcoholic Pairings
Lemonade: The tangy sweetness of lemonade can provide a nice contrast to the savory creamed beef, while refreshing your palate between bites.

Iced Tea: A classic iced tea can be a simple and satisfying pairing, with its mellow flavor and refreshing qualities to balance the dish.

Sparkling Water: If you're looking for something light and bubbly, a sparkling water will easily wash down each bite.
