ingredients
2 cups biscuit baking mix
1 medium zucchini, shredded
3/4 cup sugar
1/4 cup vegetable oil
3 eggs
1 teaspoon vanilla extract
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 cup chopped nuts
directions
Heat oven to 350 degrees F and grease the bottom of 9" x 5" x 3" loaf pan.
Beat all ingredients in medium bowl with electric mixer at low speed for 30 seconds, scraping bowl constantly. Beat at medium speed for 1 minute, scraping bowl occasionally. Pour into pan.
Bake 50 to 55 minutes or until toothpick comes out clean. Cool 10 minutes.
Loosen sides of pan and remove and place on wire rack top side up. Cool completely for about 2 hours before slicing.
