Wheat Germ Zucchini Bread

ingredients
2  eggs
1 3/4 cup sugar
2 teaspoons vanilla extract
3/4 cup oil
3 cups grated, unpeeled zucchini
2 1/2 cups flour
1 1/2 cup wheat germ
2 teaspoons cinnamon
1 cup chopped nuts
directions
Beat eggs until light and fluffy. 
 In another bowl, beat sugar, vanilla and oil. Stir in zucchini mix with flour, wheat germ, cinnamon, a little salt and nuts. Gradually stir into eggs mixture. 
 Turn into greased and floured loaf pans. Bake in a 350 degrees F oven for 1 hour or until a toothpick inserted in center comes out clean. If using a glass pan, bake at 325 degrees F for 1 hour.
