Butterscotch Zucchini Bread

ingredients
3 eggs
1 cup oil
2 teaspoons vanilla extract
2 cups sugar
2 cups grated zucchini
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon baking powder
1/2 cup rolled oats
1 package (3.4 ounce size) butterscotch pudding mix
1 cup nuts, raisins or dates
LEMON FROSTING
2 cups confectioners' sugar
1/2 teaspoon grated lemon peel
2 tablespoons lemon juice
1/4 cup butter
directions
Mix bread ingredients. Pour into 2 greased, floured, wax paper lined pans. Bake 1 hour at 350 degrees F.
Blend ingredients for lemon frosting and spread over tops of loaves after cooled.

This bread was awesome! It melts in your mouth. I would like a little more butterscotch taste and so next time might try adding some butterscotch chips. But, it was wonderful!

This bread was without a doubt a big hit when offered to some critical senior citizens. They insisted on the recipe. Would make again. Maybe try other pudding flavors. Oh the possibilities!

Super, super, super good...i made mine with Splenda for Baking and couldn't tell the difference. We have mammoth zucchinis in my backyard (3 - 5.5lbs) and can't make enough bread. My boyfriend calls the plants...the machines -- they just don't stop! But this bread is amazing...
