Oatmeal Carrot Cake Bread

ingredients
1 cup oats
1/2 cup skim milk
2 1/2 cups flour
1 cup firmly packed brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cup shredded carrots
1/2 cup raisins
1 can (8 ounce size) crushed pineapple in juice
4 egg whites
1/4 cup vegetable oil
1 teaspoon vanilla extract
directions
Heat the oven to 350 degrees F. Lightly spray the bottom only of a 9 x 5-inch loaf pan with non-stick cooking spray.
Combine oats with milk, mix well and set aside.
In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt, mixing well. Stir in carrots and raisins.
Combine reserved oat mixture, pineapple (including juice), egg whites, vegetable oil and vanilla, mixing well. Add to dry ingredients and mix just until dry ingredients are moistened.
Pour into prepared pan. Bake for 60-75 minutes or until wooden pick inserted into center comes out clean and crust is golden brown.
Cool for 10 minutes and remove from pan. Cool completely.
