Baked Lemon Pudding

ingredients
1/4 cup flour
1 cup sugar
1/4 teaspoon salt
1 1/2 teaspoon grated lemon rind
1/4 cup fresh lemon juice
2 egg yolks, beaten
1 cup milk
2 egg whites, beaten
directions
Combine flour, sugar, salt and grated lemon rind. Stir in lemon juice, egg yolks and milk. Gently fold in egg whites.
Pour mixture into baking dish. Set baking dish in a larger pan with high sides and fill outer pan with 1 inch of water.
Bake at 350 degrees F for 50 minutes.

Nice, but very sweet strong lemon flavour becomes sickly. Turns out really nice with sauce on bottom.
