Ambrosia Tapioca

ingredients
1/2 cup sugar
1/4 cup quick cooking tapioca
1 dash salt
2 1/2 cups orange juice
1 cup orange sections
1/4 cup chopped dates
1/4 cup flaked coconut
directions
Combine sugar, tapioca, salt and orange juice in medium saucepan. Let stand for 5 minutes.
Cook over medium heat, stirring constantly, until mixture boils. Cool slightly. Stir in orange sections and dates.
Chill at least 1 hour. Just before serving, spoon tapioca into dessert dishes and sprinkle with flaked coconut.
