ingredients
1 pie crust (9 inch)
1 1/2 cup coconut
1 1/2 cup graham cracker crumbs
1 1/2 cup chopped pecans
1 1/2 cup sugar
7 egg whites
1/2 cup chocolate chips or raisins (optional)
directions
Bake pie crust according to package direction. Cool. Reduce oven temperature to 325 degrees F.
In large bowl, combine coconut, graham cracker crumbs, pecans and sugar.
In another bowl, beat egg whites just until foamy. Add to the mixture and mix well by hand. Mixture will be stiff.
Pour into prepared pie shell. Bake, uncovered, 25 to 35 minutes or until set. Do not over-bake. Middle will be gooey.
