2 1/2 cups thin salted pretzel sticks
1/3 cup sugar
1/2 cup melted butter
1 can (14 ounce size) sweetened condensed milk
1 tablespoon freshly grated lime peel
2 tablespoons fresh lime juice
1 1/2 tablespoon tequila
1 1/2 tablespoon Cointreau or other orange liqueur
4 drops green food color
1 1/2 cup heavy whipping cream
lime slices, for garnish

directions

Grease a 9-inch pie pan.

Combine the pretzels and sugar in a food processor and pulse process until it resembles fine crumbs. Add the butter and pulse process until it is crumbly.

Transfer the pretzel crumb mixture to the pie pan and press the crumbs to form a crust on the bottom and sides. Place the pie pan in the freezer.

Combine the sweetened condensed milk, lime peel, lime juice, tequila, Cointreau, and food coloring in a bowl and mix well.

In a mixing bowl, beat the heavy whipping cream with an electric mixer on medium speed until soft peaks form. Fold the whipped cream into the lime filling and mix only until uniform in color.

Pour the pie filling into the crust. Place the pie in the freezer, uncovered, for 6 hours. If freezing longer than 6 hours, wrap the pie tightly in plastic wrap after the initial 6 hours.

When ready to serve, transfer the pie to the refrigerator about 15 minutes before serving. Garnish the margarita pie with lime slices.

    I have made this pie a dozen times, everytime with rave reviews. It is easy, it is nice because you do it the day before and you can focus on dinner the day of the party, it is unusual and guests love it. I don't use the food coloring and the lime peel ribbons look beautiful in the cream of the pie. It is a little expensive because of the alcohol, but you can buy the plane size bottles if you don't want to invest in the whole thing.
