ingredients
3/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 1/2 cups half-and-half or light cream
1/2 cup margarine or butter, cut up
1/4 cup brown sugar
1 teaspoon vanilla extract
1 baked pie shell (9-inch size)
ground cinnamon
directions
Combine sugar, cornstarch, and salt in a medium saucepan. Stir in the cream. Cook and stir over medium heat until thickened and bubbly. Remove from heat. Stir in butter until melted. Stir in brown sugar and vanilla.
Pour into pie shell. Sprinkle with cinnamon. Bake at 325 degrees F about 30 minutes or until edge is bubbly. Cool completely on a wire rack.
