Slow Cooker Vichyssoise

ingredients

5 medium potatoes, sliced
4 leeks, sliced
1 large chopped onion
1 1/2 teaspoon salt
2 cups chicken stock
2 cups milk
1 cup heavy cream
chopped chives

directions

Combine all ingredients except last three in slow cooker. Cook on high for 3 hours.

Puree mixture in blender or food mill and return to slow cooker. Add milk and cream, stir well, and heat to boiling, about 1 hour on high.

Chill. Serve with chives.
