Cold Portuguese Cucumber Soup - CDKitchen.com

ingredients

3 large cucumbers
4 tomatoes, peeled and chopped
1 small red bell pepper, seeded and chopped
1 small green bell pepper, seeded and chopped
1 clove garlic, pressed or minced
2 tablespoons finely chopped onion
5 cups fat-free chicken stock
1/2 teaspoon salt
1 tablespoon lemon juice
1/2 cup dry white wine
croutons, for serving

directions

Peel the cucumbers using a vegetable peeler or knife. Cut the cucumbers in half lengthwise. Scoop out the seeds using a spoon.

Grate the cucumbers on a box grater and place in a glass or plastic (non-reactive) bowl.

Add the tomatoes, bell peppers, garlic, onion, chicken stock, salt, lemon juice, and wine. Mix well. Cover the bowl and refrigerate for 2-3 hours or up to 6 hours.

Serve the cold soup garnished with croutons.
