It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Chilled Shrimp Soup

ingredients
2/3 pound cooked shrimp (frozen is fine)
2/3 seedless English cucumber, peeled and roughly chopped
1/4 cup sweet onion, roughly chopped (Vidalia or similar)
OR
3 tablespoons scallions
2 tablespoons Dijon mustard
2 teaspoons sugar or other sweetener
3 teaspoons dried dill
OR
2 tablespoons chopped fresh dill
3 cups buttermilk
pickled beets (optional)
directions
Put all ingredients except about 2 cups of the buttermilk in blender or food processor and puree (The shrimp can be pureed while still frozen).
Add the remaining buttermilk and taste for seasoning. You can choose to garnish this with finely diced pickled beets.
