Chilled Cranberry Soup - CDKitchen.com

ingredients

4 cups fresh cranberries
3 cups water
1 1/2 cup sugar
1 stick (3-inch size) cinnamon
1/2 teaspoon ground cloves
2 tablespoons lemon juice
1 tablespoon finely shredded orange peel, no pith
orange peel curls (optional, for garnish)
mint (optional, for garnish)

directions

In a 3-quart saucepan, combine cranberries, water, sugar, cinnamon, and cloves. Bring to boiling and reduce heat. Simmer uncovered for about 5 minutes, or until about half the berries have popped.

Remove from heat, stir in lemon juice and orange peel. Cool.

Cover and chill for 4 to 24 hours. Before serving, remove cinnamon stick.

To serve, ladle into soup bowls, then top with mint and orange peel if desired.
