Slow Cooker Yankee Bean Soup

ingredients
6 cups water
1 pound dried navy beans
1 ham bone
1 cup ham cubes
1 small onion
1 clove garlic
2 teaspoons salt
1 bay leaf
1/2 teaspoon black pepper
1 carrot, cut in 1/8" dice
5 potatoes, diced
salt, to taste
directions
The day before serving: Place ham bone in crockpot. Cover with water. Cook on LOW all day, 10 or more hours if possible. Remove bone.
Soak beans in water in crock-pot overnight. Cover and cook on high 2 to 3 hours until tender (do not drain water from pot). Add remaining ingredients.
Cover and cook on low about 8 hours. Serve hot and garnish with chopped chives.

This recipe takes 2 days to complete but is WORTH THE TIME. I only used 1/2 the potatoes since I doubled the recipe and only had so much room in my crock pot. Delicious!
