A rustic lima bean soup with beef broth, smoked sausage, and plenty of vegetables, all simmered in a slow cooker.
ingredients
4 cups beef broth
2 bay leaves
4 stalks celery, diced
2 large potatoes, peeled and cubed
2 large carrots, sliced in 1/2-inch slices
1 large onion, diced
1 package (16 ounce size) dry lima beans
salt and pepper, to taste
1 pound smoked kielbasa, sliced in 1/2-inch rounds
directions
Combine all the ingredients in the crock pot. Cover the crock pot and cook on low heat for 6-8 hours or until the lima beans are cooked and the vegetables are soft.
Remove the bay leaves.
Stir well then serve hot. The soup should be thick.

This came out very good! I had no potatoes, so I skipped them. Instead of the beef boullion cubes I used beef stock left from pot roast I made in the crock pot a few days ago with Mccormick pot roast crock pot seasoning.Otherwise I followed the recipe.Having never used dried lima beans before, I did not know how we would like it. This is a very easy and economical soup that tastes delicious.
