1 tablespoon butter or bacon drippings
2 eggs
2 cups buttermilk
1 teaspoon sugar
1 teaspoon salt
1 teaspoon baking soda
2 cups stone-ground white cornmeal

directions

Preheat the oven to 450 degrees F.

Add the butter or bacon drippings to a 10-inch cast iron skillet. Place the skillet in the oven to heat.

In a bowl, whisk together the eggs and buttermilk until combined.

In a bowl, combine the sugar, salt, baking soda, and cornmeal. Mix well. While stirring, add the egg mixture to the cornmeal mixture, mixing just until combined. Do not over mix.

Remove the skillet from the oven and tilt the pan to coat the bottom with the butter or drippings.

Pour the cornbread batter into the hot skillet and return it to the oven.

Bake at 450 degrees F for 20-25 minutes or until the cornbread is set.
