Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.


2 cups plain yogurt
1 tablespoon vegetable oil
1 large diced sweet onion
2 medium peeled, diced sweet potatoes
1 medium peeled, diced Idaho potatoes
4 cups reduced-fat chicken broth
salt, to taste
ground black pepper, to taste
thyme leaves
In a soup pot, heat oil. Add onions and saute for 3-4 minutes. Add sweet and Idaho potatoes and chicken broth. Bring to a boil, reduce heat and simmer soup for 25-30 minutes.
Puree soup and season with salt and pepper, if needed. Whisk in yogurt and serve with a sprinkle of thyme leaves.
