- #82311
30-60 minutes
ingredients
4 slices bacon, chopped
3 medium potatoes, peeled & cut into 1/2" cubes
2 stalks celery, chopped
4 green onions, chopped
1/4 cup water
1/4 teaspoon black pepper
2 1/2 cups milk, divided
1/4 cup flour
1 teaspoon onion salt
directions
Place bacon in casserole dish. Cover and microwave on high for 4 1/2 to 5 1/2 minutes until lightly browned, then drain (this means pour out the grease, do NOT pour it down the sink unless you want clogged pipes--try pouring it into a paper cup and throwing it out after the grease hardens).
Add potatoes, celery, onions, water and pepper to dish. Cover and microwave again on high for 5 minutes, then stir. Microwave covered on high until vegetables are tender (5-7 more minutes).
Add the flour to 1/2 cup of milk, stirring well. Stir flour/milk mixture into the potato/everything else mixture.
Add remaining milk and onion salt. Microwave uncovered on high for 3 minutes, then stir.
Microwave uncovered on high for 3 more minutes, stir some more. Microwave uncovered on high for 3 more minutes. Serve.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
