Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

2 packages pizza dough (12 inch size)
1 pear, peeled and cut into long thin, narrow slices
1 cup crumbled goat cheese
1 1/2 red onions, sliced thin
1/4 teaspoon salt
2 tablespoons butter
3 tablespoons olive oil, divided
In a large skillet over medium heat, heat the butter and two tablespoons of the olive oil. When the butter is melted add the sliced onions. Stir occasionally until they are browned and caramelized (can take 20-30 minutes - do not rush the process). Add the salt during the last half of the cooking process. Watch to make sure they don't burn.
Flatten each batch of pizza dough out into a rectangle approximately 12" x 8". Cut each batch into 8 squares. Place the squares on a baking pan lightly dusted with cornmeal. Bake at 450 degrees F for approximately 8 minutes. Remove from oven.
Top crusts with caramelized onions, pieces of the sliced pear, and crumbled goat cheese. Return to the oven and bake for another 10 minutes or until the goat cheese is soft and just starting to brown. Serve hot.

Made this recipe as a Lenten alternative to a plain, cheese pizza. It was super easy to make and a nice change from a traditional, tomato-based sauce. We substituted a Boboli crust, instead of making our own, and it turned out just fine. I will definitely make this one again.

Not only is this recipe easy but it was a huge hit when we served it at a recent luncheon. You can even bake the pizza dough squares ahead of time and store in an airtight container (no more than a day for optimal freshness though). Even the onions can be made ahead of time and stored in the refrigerator. Bring to room temp before adding to the pizza. You could also easily convert this to use a whole, round pizza crust without any additional changes to the directions.
