Fresh Green Beans With Bacon Dressing

Green beans and bacon are a Southern standard, right up there with collard greens. Doesn't mean they're always done right, though. Overcooked beans and too-salty dressings are all too common, so grab this recipe and get it right.

ingredients

1/2 pound green beans, trimmed, cut into 2-inch lengths
2 slices bacon
1 tablespoon chopped shallot
2 teaspoons white wine vinegar
salt and pepper, as desired

directions

Bring a large pan of water to a boil over medium-high heat. Add the trimmed green beans to the pan and let cook for 8 minutes or until tender. Drain the beans well and transfer to a shallow dish.

Heat a skillet over medium heat. Add the bacon and cook, turning as needed, until crisp, about 8 minutes. Remove the bacon to paper toweling to drain.

Add the chopped shallot to the grease in the skillet and cook, stirring constantly, for 2 minutes or until softened. Remove the skillet from the heat. Stir the vinegar into the skillet. Season the shallot mixture with salt and pepper, as desired.

Pour the shallot mixture over the green beans and toss gently. Coarsely crumble the bacon and sprinkle it over the green beans.

Serve the green beans with bacon dressing hot.
