The night before Thanksgiving or other big family event, make this easy recipe for mashed potatoes. 10 potatoes, peeled
8 ounces cream cheese, softened
1 cup sour cream
salt and pepper, to taste
3 tablespoons cold butter, cut in bits
Add the peeled potatoes to a large pan of boiling water. Cook until the potatoes are fork tender. Drain well.
Beat the potatoes lightly with an electric mixer (just enough to break them up a bit). Add the cream cheese and sour cream. Beat until just smooth. Season with salt and pepper.
Grease a 9x13-inch baking dish. Spread the mashed potatoes in the prepared dish. Dot evenly with the butter. Cover the dish tightly with foil and refrigerate until the next day. The potatoes can also be frozen at this stage, just thaw before baking.
When ready to bake, preheat the oven to 325 degrees F.
Place the potatoes in the oven and bake, covered, for 15 minutes at 325 degrees F. Remove the foil and bake for 20 more minutes or until heated through.
Serve hot.
