Crispy Garlic Mashed Potato Balls

ingredients
vegetable oil, for frying
2 cups warm mashed potatoes
2 eggs
1/2 cup flour
1/2 cup grated medium or sharp cheddar cheese
1 teaspoon garlic salt
1 cup seasoned bread crumbs
directions
Warm oil on high heat to 375 degrees F in a soup pan. Mix together mashed potatoes, eggs, flour, cheese, and garlic salt until smooth. Place bread crumbs in a cereal bowl. Drop and roll balls of dough in bread crumbs.
Fry balls in hot oil 2 to 3 minutes or until golden brown. Remove from oil with slotted spatula or spoon and cool on a cooling rack. Dip in ketchup or ranch dressing.
