3-Day Mashed Potatoes

ingredients
5 pounds white potatoes (Yukon Golds it will look polka dotted)
butter
salt
white pepper
8 ounces small curd cottage cheese
4 ounces sour cream
crushed soda crackers, size of bread crumbs
directions
Butter a casserole dish. Peel, boil and mash potatoes using lots of butter. Flavor with salt and pepper to taste. Stir in the sour cream. Gently fold in the cottage cheese.
Put into casserole. Top with a dusting of the crushed crackers and drizzle generously with butter. Cover and refrigerate up to 3 days.
To Finish: Preheat oven to 350 degrees F. Bake uncovered for 30 minutes.
