These simple biscuits are extra buttery with chilled butter mixed into the batter and melted butter brushed on top after baking.
1/3 cup butter, chilled
2 1/2 cups biscuit baking mix, plus more for the work surface
2/3 cup milk
melted butter, as needed
Heat oven to 450 degrees F.
Cut the chilled butter into 1/4-inch cubes.
Add the baking mix and butter to a bowl and toss well with a fork to combine. Add the milk and stir with the fork just until the milk is absorbed - do not over mix.
Dust a workspace with additional baking mix. Turn the dough out onto the surface and knead 5 times. Pat to 1/2-inch thickness.
Cut the dough with a 3-inch biscuit cutter. Gather any scraps, reroll, and recut.
Place the biscuits 2-inches apart on an ungreased cookie sheet. Bake at 450 degrees F for 9 minutes or until golden brown. Brush with melted butter immediately when they are done.
Make sure to handle the dough as little as possible to prevent tough biscuits.
For extra flavor, add a pinch of salt or sugar to the dough.
For golden brown biscuits, brush the tops of the biscuits with an egg wash before baking.
Serve biscuits warm with butter, jam, honey, or gravy.

This is a great recipe for biscuits. I added 1 tsp of baking soda which helped to add to their light and fluffy texture. Thanks
