ingredients

1/3 cup butter, chilled
2 1/2 cups biscuit baking mix, plus more for the work surface
2/3 cup milk
melted butter, as needed

directions

Heat oven to 450 degrees F.

Cut the chilled butter into 1/4-inch cubes.

Add the baking mix and butter to a bowl and toss well with a fork to combine. Add the milk and stir with the fork just until the milk is absorbed - do not over mix.

Dust a workspace with additional baking mix. Turn the dough out onto the surface and knead 5 times. Pat to 1/2-inch thickness.

Cut the dough with a 3-inch biscuit cutter. Gather any scraps, reroll, and recut.

Place the biscuits 2-inches apart on an ungreased cookie sheet. Bake at 450 degrees F for 9 minutes or until golden brown. Brush with melted butter immediately when they are done.

recipe tips

Make sure to handle the dough as little as possible to prevent tough biscuits.

For extra flavor, add a pinch of salt or sugar to the dough.

For golden brown biscuits, brush the tops of the biscuits with an egg wash before baking.

Serve biscuits warm with butter, jam, honey, or gravy.

common recipe questions

What is the purpose of using chilled butter?

Chilled butter helps create a flaky texture in the biscuits by melting during baking and creating air pockets in the dough.

Why should I not over mix the dough?

Over mixing the dough can result in tough biscuits, as it develops the gluten in the flour too much.

Do I have to use a biscuit cutter, or can I use a different tool?

While a biscuit cutter is traditional, you can also use a sharp knife to cut the dough into squares or triangles if you don't have a biscuit cutter. Or, use the rim of a glass for a make-shift biscuit cutter.

Can I add herbs or cheese to the biscuit dough?

Yes, herbs, cheese, bacon bits, or other flavorings can be added to the dough.

Why do you have to brush melted butter on top of the biscuits after baking?

Brushing the biscuits with melted butter adds flavor, shine, and helps keep the tops soft.

Can I freeze the biscuit dough to bake later?

Yes, the biscuit dough can be frozen either before or after cutting into biscuits. Thaw in the refrigerator before baking.

How should I store leftover biscuits?

Store leftover biscuits in an airtight container at room temperature for 2-3 days, or freeze them for longer storage.

Can I reheat leftover biscuits?

To reheat leftover biscuits, wrap them in foil and warm in a 350-degree oven for 10-15 minutes, or until heated through.

This is a great recipe for biscuits. I added 1 tsp of baking soda which helped to add to their light and fluffy texture. Thanks
