Buttercream frosting might be impossible to mess up, but some are better than others, and this lemon buttercream is up there with the best! It only has 4 ingredients, so make sure to spring for fresh-squeezed lemon juice to bring out the brightest flavor possible.
2/3 cup butter, softened
4 cups powdered sugar
1 teaspoon grated lemon peel
4 tablespoons lemon juice, or as needed
Place the butter in a mixing bowl and beat on medium speed with an electric mixer until light and fluffy.
With the mixer running, gradually add the powdered sugar, scraping down the sides of the bowl as needed.
Beat in the lemon peel and enough of the lemon juice to reach the desired spreading consistency.
1 batch should frost a 13x9 cake or a 2-layer cake.

THIS RECIPE WAS QUICK AND EASY! I DIDN'T HAVE ENOUGH FRESH LEMONS SO I HAD TO ADD TWO TEASPOONS OF LEMON EXTRACT. THE TASTE WAS FRESH AND THE FROSTING LIGHT AND FLUFFY AS PROMISED! I AM GOING TO USE THIS SITE FOR MY CAKES TOO!

Definitely use fresh lemon juice in this recipe. It's got such wonderful flavor! I did tint it yellow for my use but it doesn't have to be. I might try this same recipe using key limes too.

This frosting was so good!!! I put it on some lemon cupcakes and there was the perfect amount of lemony goodness!!! Everybody had a cupcake, some of the kids had two, and everybody asked for the frosting recipe. Good job- it's perfect!

Oh, my gosh!! I used this on a lemon cake and then top it with crushed (with mallet) lemon drops that I screened through a strainer to have real fine topping. This frosting is excellent.
This frosting is excellent and very easy to make. I would recommend this to anyone looking for a simple, delicious lemon frosting recipe!!

Fairly quick and easy to make. I used store bought lemon juice, but fresh lemon zest. I think fresh lemon juice would likely taste better. I frosted a 13x9 lemon cake (from a mix) and had plenty of frosting leftover. I took the cake to a potluck and had many people rave over the frosting. They also asked me for the recipe. I would definitely use this again.

I used this frosting for a white velvet cake that I made. I altered the recipe slightly by adding 1 tablespoon of lavender. Everyone at the party asked for the frosting recipe. It was so very delicious.

This was so easy to make! It was also outstandingly delicious! I squeeed 1 1/2 small lemons right into it and it tasted so good!
