It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

ingredients
1 cup granulated sugar
2 sticks margarine
1 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
4 1/2 cups plain flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cream of tartar
1 cup powdered sugar
directions
Mix first four ingredients and cream well. Next add dry ingredients. Drop mixture on baking sheet and bake at 325 degrees F for 15 minutes.
These cookies are extra good when rolled in powdered sugar while warm.
Variation: Roll dough into balls about the size of a walnut. Criss-cross with fork. Put chocolate morsel in middle, and sprinkle granulated sprinkle sugar on top before baking.
