1/2 cup butter
1 cup sugar
1/4 cup molasses
1 egg
2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon white pepper
1 tablespoon crystallized ginger, chopped
3/4 cup powdered sugar
In bowl, beat together the first 3 ingredients until blended. Beat in egg.
Sift together the next 6 ingredients into bowl. Add to butter mixture, beat until blended. Stir in crystallized ginger, cover, refrigerate 1 hour.
Heat oven to 350 degrees F. Coat 2 baking sheets with cooking spray.
Place powdered sugar in bowl. Dust hands with flour. Roll pieces of dough into balls, using 2 teaspoons. Roll dough in powdered sugar to coat. Transfer to baking sheets. Bake for 12 min. or until cookie tops are covered with cracks. Cool.

Definitely can increase the amount of crystallized ginger. I doubled it and it could have taken a lot more. Otherwise, came out great!

These cookies turned out to be really nice. Since we hardly have butter at home, I used pure olive oil instead. Of course the dough became stickier than of a butter dough, so I added a bit more flour. I also increased the amount of the crytallized ginger. Oh, one more thing, the cookies didn't crackle but it doesn't matter to us.
