ingredients
3 eggs
2 cups dark brown sugar
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cloves
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/2 teaspoon ground black pepper
1 tablespoon cinnamon
1 cup walnuts, chopped
1 pound seedless raisins
1/2 cup citron, chopped
confectioners' sugar
directions
Preheat oven to 375 degrees F.
Using mixer, beat eggs until light. Gradually add brown sugar and beat 2 minutes. Sift flour with baking powder, baking soda, salt, spices and pepper. Add nuts, raisins and citron.
Pour into eggs and sugar mixture and stir to make stiff dough. Form small balls and roll until smooth. Place cookies on buttered sheet, bake for 10 minutes.
While still warm, roll in confectioners' sugar. Store in air tight container for at least 1 week before eating.

I was glad to find a pepper nut recipe, using citron, because those were the kind that my mother and family made. We were Germans with Mennonite and Russian background. Someone said they could not find citron, you might see it as glacéd fruit. It's the kind of fruit you find in fruitcake. If you can't find it in the grocery store, it is sold on Amazon. You can buy mixed or just lemon or orange peel glacéd. Oh, I was surprised to see the fruit put in a hole, my mother used to grind it and I'm planning to do that with the food processor. You need a pretty smooth go to get the tiny peppernuts, so grinding or processing the citrine, and the raisins would make a better sense for me.
Why does it say eggs separated? doesn't tell u what to do with egg whites. Just says "beat eggs until light". Dough is also very crumbly. How are u supposed to roll into a ball if it doesn't hold shape? Added some shortening last time so dough would hold together better

My mother in law made these cookies and they were a favorite for my husband and his brothers. I have the recipe which is almost identical from Woman's Day December 1966. I CANNOT find citron anywhere and have wanted to bake these cookies for a long time. Any ideas? Can you make them without the citron? or substitute something?

Can you elaborate? How does it "not work"? Do the cookies not set? Is the flavor off? Did you alter anything? More info will help others to determine what might need to be changed.
