Macadamia Island Cookies

ingredients
1 2/3 cup flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter
3/4 cup packed brown sugar
1/3 cup granulated (white) sugar
1 teaspoon vanilla extract
1 egg
2 cups white chocolate chips
1 cup flaked coconut
3/4 cup macadamia nuts
directions
Preheat oven to 375 degrees F.
Combine flour, baking powder, baking soda and salt in a small bowl.
Beat butter, brown and white sugars and vanilla in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in white chocolate chips, coconut and nuts.
Drop by rounded tablespoons onto an ungreased baking sheet. Bake for 8 to 10 minutes.

soft not too sweet coconut makes it. I used dark chips. Just as good.
