Crackling Cookies

ingredients
2 cups cracklings
1 cup raisins
1 cup brown sugar
1 cup white sugar
2 eggs
2 teaspoons baking soda, dissolved in
1/2 cup hot water
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
2 1/2 cups flour
directions
Preheat oven to 350 degrees F.
Combine the cracklings and raisins in a food processor fitted with a blade. Pulse-process to grind the two ingredients together.
Combine the crackling mixture and remaining ingredients in a large bowl and mix well until combined.
Drop the cookie dough on a cookie sheet by spoonfuls and bake at 350 degrees F for 12-15 minutes or until lightly browned.
Let cool on the cookie sheet for 2 minutes then remove to a wire cooling rack.

These were easy to make and delicious. Been wanting to make crackling cookies for years. Really glad to have found a good recipe. My cracklings were fresh and done just right. A real keeper.
