Cottage Cheese Oatmeal Cookies

ingredients
1 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 1/2 cup sugar
1/2 cup molasses
1 egg, beaten
1 teaspoon lemon peel
1 tablespoon lemon juice
3/4 cup melted shortening
1/2 cup creamed cottage cheese
3 cups quick-cooking rolled oats
directions
Sift together flour, salt, baking soda and cinnamon. Mix next five ingredients, then add the sifted flour mixture, shortening, and cottage cheese. Blend in rolled oats.
Drop by teaspoonfuls onto greased cookie sheet and bake at 350-375 degrees F until done.
