Alabama Cookies

ingredients
1 cup shortening
1 cup sugar
1 cup brown sugar, packed
2 large egg
1 teaspoon vanilla extract
1 1/2 cup flour
1 tablespoon salt
2 cups regular oats
2 cups pecans, chopped
1 cup rice krispies
1 cup sweetened flaked coconut
directions
Cream shortening, gradually add sugars, beating well at medium speed of mixer. Add eggs and vanilla, beating well. Combine flour and salt, add to creamed mixture, mixing well. Stir in oats and remaining ingredients.
Drop dough by heaping teaspoons onto greased cookie sheets. Bake at 325 degrees F for 10 to 12 minutes. Let cool slightly on cookie sheets, remove to wire rack to cool completely.

made this cookie and it is a great tasting cookie,,however if you want six dozen of cookies..you really have to make them small..and i like a big cookie..so i ended up getting around 3 1/2 dozen with a big cookie scoop..notice there is no baking or soda powder in this recipe..but it is very good and easy to put together!

I used walnuts instead of pecans, it is a very good cookie and easy to make
