Elegant Wrapped Shrimp

ingredients
2 jumbo shrimp
1 large potato
1 clove garlic, minced
1 bunch spinach, cleaned
2 tablespoons soy sauce
1 tablespoon brown sugar
4 tablespoons wasabi powder
1 tablespoon warm water
2 ounces corn oil
directions
Clean the shrimp, leaving the tail attached. Cut the potato into thin threads and wrap the threads lightly around the shrimp, covering them completely.
In a saute pan, cook the garlic in a bit of oil until golden brown. Add the spinach and cook until tender. In a small pan, mix the soy sauce with the brown sugar, place on the stove and reduce by half. Blend the wasabi powder with the warm water until smooth. Place the remaining corn oil in a shallow pan and heat. When the oil is hot, carefully place the shrimp in the oil and cook until golden brown. Arrange the sauteed spinach in a tight circle on each plate and drizzle with the wasabi.
Drench the shrimp in the soy sauce reduction and place on top of the spinach.
