Delicious Cold Seafood Cocktail (Pareve)

ingredients
12 ounces cod, scrod, or halibut fillet
1 large onion
1 quart water
lettuce for garnish
matchstick carrots for garnish
Cocktail Sauce
1/2 cup tomato ketchup (low sodium, if desired)
3 tablespoons white horseradish, more to taste
directions
Place the onion in a saucepan with the water. Bring the water to a rolling boil and add the fish. Reduce heat to a high simmer and cook for about 10 minutes or until the fish is cooked through. Remove from the heat and drain. Discard the onion.
Place the fish in a glass bowl and cover tightly. Refrigerate for about 3 hours or until well chilled.
Cut the fish into chunks. Line a small plate or cocktail glass with lettuce leaves and place a few pieces of fish in the center. Cover with cocktail sauce or place the sauce on the sides. Add some carrots pieces cut into matchstick pieces and garnish with a lemon wedge.
SAUCE: Mix the ketchup and horseradish. Adjust the amount of horseradish to taste.
