ingredients

1 cup Rice Krispies cereal, crushed
2 tablespoons Parmesan cheese
2 cups Rice Krispies cereal (uncrushed)
2 egg whites
1/2 teaspoon seasoned pepper
1/2 teaspoon dry mustard
2 tablespoons light, reduced calorie mayonnaise
1 tablespoon finely chopped fresh cilantro
2 tablespoons finely chopped green onions
1/4 teaspoon liquid pepper sauce
1/4 cup finely chopped celery
1 package (6 oz. size) frozen crab, thawed, finely chopped
4 ounces cleaned, raw shrimp, finely chopped
non-stick cooking spray

Cilantro Sauce

6 tablespoons light, reduced calorie mayonnaise
3 tablespoons Dijon mustard
1 tablespoon finely chopped fresh cilantro
1 tablespoon finely chopped green onions
1/4 teaspoon liquid pepper sauce

directions

Combine the 1 cup crushed Rice Krispies cereal and cheese. Set aside.

In large mixing bowl, thoroughly combine remaining appetizer ingredients. Using level measuring-tablespoon, shape into balls. Coat balls in crushed cereal and cheese mixture. Place on baking sheet coated with cooking spray. Spray balls lightly with cooking spray.

Bake at 350 degrees F about 10 minutes or until lightly browned. Serve hot with Cilantro Sauce.

To make sauce, thoroughly combine all sauce ingredients and store in refrigerator.

Variation: Substitute 1 package (8 oz.) imitation king crabmeat for crab.

Cuisinart processor will help a lot! And for the fish aroma / taste add lemon juice ;-) Alma Beatty

  2. Guest Foodie REVIEW:

Delicious, but had trouble holding the balls together. Perhaps it should have been mixed together in the Cuisinart, but not sure if that would hide some of the fish flavor.
