Crab and Cucumber Rolls

ingredients
1 large cucumber
1 can (6.5 ounce size) crab meat
4 tablespoons mayonnaise
1 1/2 teaspoon finely grated onion
1 pinch salt
1/2 teaspoon sugar
5 dashes Tabasco sauce
directions
Cut ends off cucumber and cut into 3 pieces. Remove seeds with corer or a sharp knife, making a large cavity.
Mix crab, mayonnaise, onion, salt, sugar and Tabasco. Stuff into cucumber. Wrap cucumber in plastic wrap and chill.
Slice into 1/2-inch-thick slices.

This recipe, while attractive and easy to make, was a little on the bland side. The crab filling was a little watery and didn't want to stay in the cucumber rounds very well. This recipe has potential though - add a little kick to the crab filling with seasonings. It could also use a little garnish - perhaps a sprig of watercress on top of each piece at serving time or adding some finely chopped red bell pepper to the crab filling for a little color. The one other complaint was that there was a high cucumber to crab ratio - so unless you're serving it to cucumber fanatics, you might want to try to hollow out as much of the cucumber flesh as you can to make a thinner shell. Overall, we think we'd like to experiment with this recipe again in the future.
