Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

I used low sodium chicken broth which made this a little bland so next time I'll use regular as this was good just a little bland but that was my problem not the recipe. I added some salt and other seasonings to compensate and we enjoyed it very much. It was hearty too which I didn't really expect.
