It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A hearty stew made with chicken thighs, smoked sausage, vegetables, and canned black beans

1 tablespoon olive oil
3/4 pound smoked sausage, sliced into 1/2-inch
1 pound fresh boneless, skinless chicken thigh cutlets
1 onion peeled and diced
1 red bell pepper, seeded and diced
3 cloves garlic, peeled and minced
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 can (15.5 ounce size) chopped tomatoes drained
1 can (15.5 ounce size) black beans drained, rinsed
Heat oil in a large skillet or stockpot over medium-high heat. Add sausage and saute until browned. Add chicken and brown on all sides, about 5 minutes.
Add onion, pepper and garlic; saute until soft, about 7 minutes. Add chili powder, salt and pepper. Mix in the tomatoes and black beans.
Reduce heat, cover and simmer 20 minutes or until chicken is cooked thoroughly and tender. Sprinkle with hot sauce if desired.
