Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

- #60150
1-2 hrs
ingredients
1 package (7 ounce size) sweetened flaked coconut
2 packages (3 ounce size) strawberry gelatin powder
1 can condensed milk (NOT evaporated)
directions
Simply mix all the ingredients very well by hand and chill mixture very well. Then form into 1 inch balls with your hands. Wetting your hands at times will make for easier rolling.
Chill the coconut balls very well. They also freeze very nicely. These look nice when served in those fluted paper muffin or candy cups.
