1/4 cup cornstarch
1/3 cup powdered sugar
1 envelope unflavored gelatin
1/3 cup water
2/3 cup granulated sugar
1/2 cup light corn syrup
1 pinch salt
1 teaspoon vanilla extract
Sift together the cornstarch and powdered sugar. Grease a baking pan. Sprinkle 1 tablespoon of the sugar mixture into the pan, tilting to evenly coat the bottom and sides. Do not shake out excess.
Soften the gelatin by combining with the water in a saucepan. Let sit for 5-7 minutes. Stir in the sugar and heat over low heat, stirring, until all is dissolved.
Combine the gelatin mixture, corn syrup, salt and vanilla with an electric mixer. Beat on high for 15 minutes until peaks form.
Spread mixture into the baking pan. Let sit until set, about 2-3 hours. Slice the mixture into desired sizes. Roll each piece in the cornstarch mixture. Place on paper toweling and let stand until dry. Store in airtight container.

I've been looking for fun projects to make with my kids this summer while they are home. We had a lot of fun with this recipe. The marshmallows turn out great and the kids had fun seeing how they are made and helping roll them in the cornstarch.

The guys are having a Civil War weekend for boy scouts this weekend, and wanted something for the campfire. Perfect! Agree with other reviewer-- a stand mixer is a must! Who new marshmallows were so easy to make???
