ingredients
2 cups sugar
1/2 cup buttermilk
2 tablespoons butter
1 teaspoon vanilla extract
1/2 cup shredded coconut
directions
Combine the sugar and buttermilk in a heavy saucepan over medium heat. Cook, stirring constantly, until the mixture reaches softball stage (100 degrees F).
Remove from heat and add the vanilla. Beat vigorously until the mixture thickens.
Stir in the coconut.
Drop the candy by teaspoonfuls onto waxed paper. Let cool until firm. Store in an airtight container.
